Tomato Spread



This quick recipe goes well with bread. It is savory item and can be made in a jiffy (preferentially if you have some onion diced).

Ingredients (for 2 ):

  • tomatoes: 2 BIG juicy ripe ones cut into thin discs
  • onions: 1/4 diced into medium pieces
  • ginger: 1/4 tsp paste , or 1/2 inch ginger piece crushed
  • garlic: 1/4 tsp paste, or 1 pod
  • green chillies : 0-2 cut into small pieces (to taste)
  • salt - to taste
  • sugar- 1.5 tsp
  • Oil - 1.5 tsp
Method
-
Heat oil in pan
-
Add onions and fry them till some turn golden colored
-Add ginger and garlic pastes, and fry a little more
-Add salt (and green chillies, if desired)
-Add the tomatoes and sugar.
-Fry the tomatoes till they are very soft , turning them gently couple of times to prevent them from burning.

Top the spread on bread, and enjoy with warm tea on the side.
